WE PUT PEOPLE AND PRODUCE FIRST - WE ONLY BUY DAY BOAT FISH, MEAT IS SOURCED DIRECTLY FROM CORNISH SMALL HOLDERS & THE ORGANIC VEGETABLES ARE FROM LOCAL MARKET GARDENERS.

THE MEXICAN PRODUCE WE USE IS EXPORTED BY CO-OPERATIVES WHO SUPPORT FARMERS USING REGENERATIVE PRACTICES.

WE ARE JENN & FRANCIS, PARTNERS IN LIFE AND COOKING.

SINCE OUR FIRST POP TAQUERIA IN 2015 AT THE BEDFORD TAVERN, FINSBURY PARK, LONDON WE’VE BEEN ON A JOURNEY THAT’S TAKEN US FROM RUNNING A RESTAURANT KITCHEN IN BERLIN TO JENNIFERS HOME COUNTRY OF MEXICO, WHERE WE TRAVELLED EXTENSIVELY, MEETING COMMUNTIES AND PICKING UP COOKING TIPS FROM OUR AUNTIES, AS IS TRADITION IN MEXICO.

IN 2018 WE LANDED IN CORNWALL, IT’S BEEN HERE WHERE WE HAVE BECOME CLOSER TO THE SOURCE OF THE RAW INGREDIENTS WE USE AND ESTABLISHED OURSELVES AS PART OF THE WONDERFUL COMMUNITY OF HOPSITALITY PROFESSIONALS AND FOOD PRODUCERS.

DURING OUR TRAVELS WE HAVE BEEN LEARNING THE ANCIENT TECHNIQUE OF TURNING MAIZ INTO MASA - NIXTAMAL.

WE PROMOTE THE IMPORTANCE OF PRESERVING HEIRLOOM VARIETIES OF CORN AND SHARE THE RICHNESS OF THIS ANCESTRAL COOKING METHOD.

OVER THE PAST FEW YEARS WE HAVE EXPERIMENTED WITH GROWING VARIETIES OF HEIRLOOM CORN HERE IN CORNWALL, THIS JOURNEY OF EXPLORATION WILL CONTINUE TO EVOLVE, STRENGTHENING OUR PERSONAL CONNECTION BETWEEN CORNWALL & MEXICO.
